This is the weird Ghost Shop guys quest. He says that once you get a 1000 points on your card, youll be a happy man. Each Big Poe is worth 100 points, and can be found only in Hyrule Field on horseback.

Some are harder than others, and sometimes you may have to ride through these locations at different angles a few times so you can get your shots off to off them.
You can walk around Hyrule Field and find the locations definitely, but the Poe you encounter on foot will not be Big Poe and will not earn you points.

Unlockable: Dark Spyro

To unlock the Dark Spyro character, beat all of Story Mode. Then, select Extras from the Main Menu and reload your save file. This will allow you to access “Dragon Challenges”. There are five of them, so defeat them all. If you do so, you will then have Dark Spyro to use.

Wait in the water of the moat and destroy seven ninjas with your sword, a blue creature will fly by. Capture him for a 1-Up. This will work in all of the moat scenes.
